
Tonight, it’s Queensland’s turn to cook as solider mates David and Scott host their instant restaurant. The boys are used to high-pressure situations but how will they go under fire in the kitchen?
In Townsville the Diggers say even though they eat ration packs, it doesn’t mean they can’t turn out a gourmet meal. Off shopping they head to the fishmongers and for entree are making red claw (yabbie) salad with a coriander blini and a mint, lychee and kiwi fruit salsa. Pete thinks they have made the wrong choice of fruit.
For main the boys are taking on Surf and Turf – beef fillet and Moretan Bay Bug with a sweet potato cake, broccolini and bearnaise sauce. Pete says he would never usually order surf and turf with a red meat but a white meat like chicken. What!!! Surf and Turf has always been steak with either lobster, prawns or bug meat. *
Dessert is a mango and macadamia nut flan, with vanilla cream, toffee shards and a mango coulis. The guys are calling their instant restaurant “The Diggers Rest” and the theme is the military. There are sandbags, WW1 memorabilia and Diggers statues all about and of course poppies.
The boys aren’t dessert people so thats their main concern. The boys pastry is going haywire so they add more butter and put it back in the fridge. “Lock it in Eddie” they say, oops – wrong network! The pastry is even worse now and they decide to just stuff it in the cases. They sear of the steak as the guests are about to arrive – with Meg from NZ hoping they will stuff up – nice. Everyone is impressed by “The Digger’s Rest” and the boys welcome everyone with a glass of sherry, as is custom if you went to their mess hall – of course princess complains it should be served chilled. She’s even more uppity than usual tonight.
The judges have arrived and the boys start on the red claw salad. Thomas is getting his claws out too – but it’s princess who says “I don’t do fruit and savoury together”. I would love it if Justine stood up and slapped her silly, she looks like she wants to. The boys decide not to crack the claws and instead serve them in the shell with crackers – that’s a big no-no! Jen looks like she’s going to have a meltdown when the entree is served. She says the bilini’s look dry and flat. Pete can’t understand why they went to all this effort but presented with crackers, yet it was cooked to perfection. He thinks that the fruit doesn’t work and Manu agrees. The boys are shocked but are going to fight back.
The mates put the steaks in the oven and start on the bearnaise sauce. The steaks are out and then back in and the boys think they may be on the rare side. They have been in so long there is no way they could be rare and sure enough they are medium to well done, when they were hoping for medium rare. They serve the main and await for their judgment. Pete isn’t happy with the presentation, Manu is unhappy with his steak that is so well done. The boys have got their degrees wrong on the thermometer so hence it’s overdone, the thermometer is now thrown in the bin.
With entree and main both disasters the boys are about to serve their dessert that has already been a calamity. They make the mango coulis and they think they have failed yet again. Pete says that the dessert is amazing and the pastry is wonderful and he’s really impressed, Manu thinks it’s perfect and loves the mango shaped like Australia. Steve thinks it’s one of the best desserts he’s ever had and even Meg is impressed. Jennifer however says her pastry is raw and everyone is looking like they are getting over her whinging. Now for the scores.
