Previous Episode: MasterChef Australia Season Four – Top 19 Elimination

After a week in Tasmania, I think it’s time to sit down, wind down and note down…some skills…to be taught in this week’s MasterClass!

We’re back in the kitchen where Gary & George are waiting for them. After a debrief, it’s onto the first lesson.

Lesson 1: 30 Minute Roasted Pork Rack.

Yes, Gary is under the MasterChef clock here and he has to complete this dish like the contestants have to complete theirs- with STRESS! As a seasoned chef, I’m sure he can deal with this. Emma manages to churn out a horrible ‘don’t choke under the pressure’ joke in reference to an artichoke Gary is slicing when he prepares his vegetables. He tries to make the task suspenseful when he plates up. He does JUST finish his dish. It looks quite good. Audra and Ben are asked to taste.

Lesson 2: Salmon Two Ways (Salmon in Sesame and Salmon Cannelloni)

This is George’s dish. For the Salmon Cannelloni, the salmon is acting as the casing! They begin on the sesame bar of salmon. He gives them some good tips in cutting up the salmon patty. He also shows them how to chop herbs properly apparently. She gets Kylie to help him pipe a herb mix onto his cannelloni salmon.

For the sesame dish, George shows them a good way to dehydrate bacon. He also shows them how to cook with liquid nitrogen. Jules & Filippo are asked to taste. Alice also gets to join and taste, and George feeds her!

Lesson 3: Mojito Genoise

Celebrity UK baker Lorraine Pascale takes over for this dish. Things get a bit awkward when Beau makes mention of his refined ‘wrist strength’. She shows them how to create a cake and what to look for in a good cake. She then gets Alice (she’s helping out a bit!) to help with the praline.

It’s a beautiful dish. A nice end to the episode. Andy & Kylie are asked to taste.
