MasterChef Australia: All Stars - The Final Three Decided.

Kate is through to the finale – who will join her? We find out tonight!

The contestants enter the MasterChef kitchen and the challenge today is to cook with their favourite ingredients. Justine’s favourite ingredient is chestnuts, Chris obviously has beer while Callum’s is mushrooms.

Tonight there are three rounds and in each round they will cook with one of the ingredients. They have 45 minutes to cook and the best dish will get 3 points, second equals 2 points and one point for third. At the end of the third round, the two highest scorers will go through to Sunday night.

First up they will cook with Callum’s choice – mushrooms.

Justine – Pan fried blue eye trevalla with a mussel and mushroom saute and a cream sauce.
Chris – Mushroom 3 ways with crumbed sweetbreads and chargrilled calves liver.
Callum – Pan-roasted quail with mushroom duxelles and a truffle creme fraiche.

The cooking starts and Chris is being careful not to overcook the liver, Callum has underccoked his quail “a wee bit” (It’s raw) and Justine is worried about time. Now for jusdment.

Justine – The fish is perfection and the best plating that she has done but the mushroom flavour is very light.
Callum – The complexity of flavours and textures is wonderful. Matt loves it and says could be on any two hat menu.
Chris – Gary is nodding and Chris has cooked the liver perfectly, unfortunately it’s lacking acidity.

The best dish was Callum’s giving him 3 points and Justine comes second. So the leader board reads like this -

1 – Callum = 3 points
2 – Justine = 2 points
3 – Chris = 1 point

The next dish is Chris’ and the beer! Chris is peeved that he is coming last. With the beer they are making -

Justine – Fillet of beef with pommes Parisienne and a stout jus.
Chris – The mussels are fabulous but the fish is a little overcooked.
Callum – Caramelised stout panna cotta with chocolate mousse.

Gary is loving the idea of chris’ dish and excited by the fact that Callum is doing a dessert. Justine is using a lot of stout because her mushrooms didn’t shine through on the the first dish (oops her potatoes are a bit burnt) and Chris is self medicating with a atipple here and there. Time to see what the judges think. Chris is up first and pours a glass of beer with a large head and places the foam on his dish! What an idea – stealing that one. (Now I want a beer too!)

Justine – The beef is cooked beautifully and the jus is great but the pommes are a sad sight.
Chris – Pan fried blue eye trevalla with stout battered mussels – guess there was a Coles special on mussels and blue eye!
Callum – They adore it and devour it all. Matt says it’s almost the perfect dessert as it has crunch and texture, creaminess from the panna cotta and then the bitterness from the stout. Gary proclaims it’s the best dessert he has had all year from anywhere.

1 – Callum = 6 points
2 – Justine = 3 points
3 – Chris = 3 point

Callum is unbeatable. I knew this would bloody well end up being one from each season represented – oh Ten. You really are killing me! AAGH!!!!! Also they are

Now for Justine’s favourite ingredient – chestnuts. Oh my, we have a flash back to Chris’ audition, how funny to see them, Matt looks scruffier and fatter and George like a boy. Justine says she is the “chestnut chick” and is doing them 3 ways and Chris is doing the dish he did in his audition (mmm, doesn’t really show growth, but if it’s tried and tested it could also be a good move.) Chris has chestnuts two ways and Justine three – even though Matt suggested chris do a third, he thinks it’s not needed.

They both choose brioche and quail, intresting! They are making -

Justine – Grilled quail with chestnuts three ways. Chestnuts three ways are a confit, a puree and crumble.
Chris – De-boned chestnut quial with glazed chestnuts.

Ok, here we go to decide the final three. Will it be the girl from Canterbury, NSW or Chris from Fitzroy, VIC? Judgement day is here!

Justine – Gary loves everything – it’s delicious! Matt says she cooks like she has been in the kitchen 20 years.
Chris – lt looks great and has bags of flavour and perfect caramelisation. Matt thinks it’s amazing.

By the way – anyone else HATING the brown plates??

Now for the final reveal and the winner is, by the narrowest margins is Chris! Oh the poor Justine, well I guess she has her show and looks! Bye Justine! $5000 will go to the Chris Riley Foundation on her behalf.

Kate, Chris and Callum are through. In their series they have come 1,2 and 3.

    Here is my brief recap of tonight’s MasterClass:

    Hayden and Julie were absent from the episode as they had
    other commitments. All other All-Stars were present.

    Part 1: Mystery Box challenge. Matt Preston introduced a big
    mystery box including ingredients such as salmon, scallops, marron and
    vegetables. Both the judges and the All-Stars had 30 minutes to make a
    “cohesive” dish. Chris, Justine, Marion and Dani from the All-Stars
    made marron and confit of salmon with pickled vegetables and scallops. During
    tasting, Matt said Justine’s salmon was perfect, while pickled vegetables
    lifted the whole dish.

    Gary and George made salmon and scallops with cauliflower
    and carrot purees, which they served by nailing a piece of paper towel to the
    side of a wooden box and put the eight ingredients and purees on top of the
    paper towel. Matt said during tasting that the puree could have been smoother
    but the salmon was stunning. In a close decision, Gary and George were declared
    winners.

    Part 2: Gary and the All-Stars went to the restaurant at the
    back of the MC kitchen where Neil Perry demonstrated how to make macaroni and
    cheese, with a Rockpool salad and palm sugar vinaigrette dressing. The main
    dish has gruyere, parmesan and cheddar cheese. The All-Stars pick the herbs
    while Neil was making macaroni. Just before serving, Neil shaved truffles on
    both the pasta and the salad.

    Part 3: Poh, Callum and Kate created an Asian-style dessert
    plate comprising three separate components: ginger macarons (Callum), lime and
    chilli creme brulee with lime syrup (Kate) and deep fried souffle stuffled with
    wasabi ice cream in umami crumb (Poh), which is frozen crème anglaise balls
    covered with wasabi ice cream, deep fried for a few seconds, then coated with
    caramel and unami crumb.

    The episode ended with another feast in the middle of the MC
    kitchen, and Callum raising a glass, thanking Gary and George for inviting him
    and other past contestants to come back to the kitchen.

        With so many television commitments I have to fullfil, Alicia B has been great enough to take on the rest of the MasterChef All Stars season, so I was not planning to blog the MasterClass, sorry :( . But you seem to have recapped it very well yourself! :)
