This week in Tropical North Queensland, Paul meets a man who was born to work with crocodiles - he checks out what goes into breeding these prehistoric creatures starting with the risky business of gathering eggs under the eye of a protective mother croc.
Paul takes his experience out in the wetlands with the crocs and heads to the kitchen with a local chef who specialises in native ingredients for the menu in his Cairns eatery. Together they whip up a sumptuous mango and croc curry.
Paul then heads out to the lush tropical farmlands of the Atherton Tablelands and tries his hand on the pineapple production line which has the breathtaking backdrop of the mountains.
Then it’s on to the Nerada Tea farm in the Tropical Dairyland town of Malanda where he finds out what goes into making the perfect cup of tea. And finally, Paul is put to farm duty test by Farmer Bruce at Acton Ridge Farmstay. The farm is an hour scenic drive from Cairns and is a 200 acre fully operational farm rearing calves for the southern veal market.
Tropical North Queensland doesn’t disappoint and Paul manages to find some delectable produce to add to the ever growing menu.
